New Zealand’s cuisine is influenced by cuisines from Europe, Asia and Polynesia. Some of the dishes that have a unique New Zealand style includes lamb, pork and cervena (venison), salmon, crayfish (lobster), Bluff oysters, whitebait, paua (abalone), mussels, scallops, pipis and tuatua (both are types of New Zealand shellfish), kumara (sweet potato), kiwifruit, tamarillo and pavlova, the national dessert.

New Zealands cuisine reflects the laidback kiwi culture and it highlights more the way New Zealanders eat, generally as relaxed and unaffected as possible, in keeping with the laidback Kiwi psyche.
